The New Five Star Marriott Hotel In Docklands Has An Open-To-All Infinity Pool Cocktail Bar

Melbourne’s docklands have been going through one hell of a glow-up for quite some time now and the good news just keeps rolling with the Marriott dropping its brand spanking five-star hotel into the precinct.

It’s been over 20 years since the Marriott has put up one of its wonders on Australian soil and to mark the occasion they’ve really turned it on with four different bars and eateries throughout. The real hero however is what’s happening upstairs at Sunset House, the rooftop bar.

With views of the city and a sleek infinity pool that stretches to the edge of the building, you’d be hard-pressed to find a better spot in the city for a cocktail. The food menu will rotate between light starters, share plates, and larger dishes like the soon to be Melbourne favourite, Moreton Bay Bug brioche roll, with fermented chilli.

The hotel’s main restaurant ‘Archers,’ will be led by chef David Albert, a journeyman of the hotel fine dining industry who’ll be celebrating local producers and makers with modern cuisine. Dishes will highlight regional ingredients like the standout Great Ocean Road duck Jamon, with rhubarb compote, walnut molé and Davidson plum.

The new hotel will have over 189 super-luxe rooms and will create some serious staycation hype. You'll be able to pull up stumps for poolside hangs when the Marriott opens on Thursday, June 17.
