Nimbo Fork

If crystal clear air and fireside wine with a side of fly fishing sounds like an absolute dream to you—you’ll want to plan a trip to Nimbo Fork.

This hidden retreat lies at the foothills of the Snowy Mountains in the NSW hinterland, overlooking rolling green bushland, paddocks filled with cattle and the quiet rushing water of the Tumut River.

At the end of a charming, winding road into the property, the river forks and a row of Hamptons-style cottages comes into view. The property features six private cottages, six lodge suites and an on-site restaurant and lounge bar where you’ll find breakfast, hampers for picnics and evening dining. The menu is made up of local and seasonal produce, and the wine list has been pieced together by Chris Molineaux, a viticulturist from the Barossa Valley. In chillier months, Nimbo Fork’s extensive wine list will definitely warm you up.

Activities range from the very chill, to the very outdoorsy and spectacular. Wake up before dawn for a guided fly-fishing tour in a handcrafted wooden boat. Take to the skies and grab a bird's eye view of the Snowy Mountains via helicopter, or drop into a couple of local wineries. On the slower side, we highly recommend a picnic by the river or bushwalk along one of the many secluded trails. Watch horses graze from your private balcony, indulge in your cottage's luxurious tub or book an in-room spa treatment. Dreamy.
