Gluten Free Croissants from Wholegreen Bakery

Gluten-free bakeries are really having a moment in Sydney right now. What might seem like a niche concept has blossomed into a cult flour-free category, with scores of fans queueing up for finessed baked goods, all of them sans wheat.

Leading the charge is Cherie Lyden and the talented team at Wholegreen Bakery. With a flagship cafe in Waverley and a second outpost in the CBD, Wholegreen Bakery in Alexandria is a hole-in-the-wall-style bakery and cafe.

Here you'll find all of Wholegreen's best—gluten-free bread, pies, sausage rolls, eclairs, palmiers, danishes, and more, as well as Colombian Connection Coffee, freshly roasted in the nearby suburb of Marrickville. 

Wholegreen's gluten-free croissant recipe is one of the best in the biz. Achieving the fluffy interior and crisp, flakey exterior croissants are known for is no easy task even when regular flour is involved—but after 57 trials, head patissier Johann Vanier reckons he has cracked the code and created the ultimate GF croissant. 

“There’s so much nuance to gluten-free baking, from the ratio between flours to the exact number of layers of pastry in each croissant," explains Lyden. "I’m pretty sure we tried every gluten-free flour and starch under the sun to achieve this formula. We’ve now developed a recipe that allows the croissants to capture air and still retain a golden, crispy exterior”.
