Morrison’s Oyster Bar & Grill

Morrison’s Oyster Bar & Grill is a go-to for after-work drinks, elevated steak and seafood dinners, and long lunches swathed in deep green leather in the Sydney CBD.

The menu spotlights premium Aussie producers like Jack’s Creek, AACo and Rangers Valley beef, while oysters (from at least four sources daily) in the show-stopping oyster cabinet come from the likes of Moonlight Flat, East 33, Appellation Oysters and Coffin Bay Pacific Oysters. 

Oysters are available with mignonette or caviar, Kilpatrick with signature sauce, or tempura-battered with habanero mayonnaise, while other seafood picks include Abrolhos Island scallop crudo topped with caviar, creme fraiche and finger lime, and a Queensland prawn cocktail.

From the beef program, select cuts are aged in-house for 6–12 weeks, with a daily steak pick on the menu alongside a Black Angus sirloin, pasture-fed tenderloin, and grain-fed rib-eye from the custom Montague grill. 

A must on any grill menu, a signature Morrison’s burger features a 180-gram patty of dry-aged beef plus maple-cured bacon, cheese, lettuce, pickles and horseradish mayo with fries, and other mains look like duck ragu tagliolini or beer-battered Murray cod with hand-cut chips.

A wine list with more than 150 bottles covers approachable picks and icons from both local and French producers, while cocktails stay in the classic space with Negronis, Tom Collins and Vesper martinis being stirred up in the bar.

Happy hour runs 4pm–6pm on weekdays with complimentary bar snacks to pair with $10 Negronis and spritzes or $7 schooners, wines and basic spirits, and Oyster Hour on Wednesday sees Sydney rock oysters going for just $1.50 each between 6pm and 7pm.
